have always wanted to crack this hummus thing because the stuff in the containers from the store is so bland that after one bite, I’m done, soaking the chickpeas overnight seems like a nice improvement over the industrial process that probably is part of commercial hummus, and maybe some flavor and spice tweaks as well, best thing about homemade, thank you!

Really nice flavor! Thank you for the recipe. The only change I made was to peel the garlic, I couldn’t see the benefit of leaving it unpeeled.

What a fantastic recipe! When my friends come over for a gathering, I always serve hummus. It’s a terrific dish to impress your guests, and the best part is that it only takes a few minutes to prepare. I must mention that I peeled the chickpeas, making the dish extra smooth. The rest of the directions were followed to create an outstanding and tasty feast for guests to drool over.

That’s a wonderful recipe Stephanie! Like you said not only is hummus delicious, but very nutritious as well. It is a great source of many minerals such as zinc, selenium, magnesium, calcium, phosphorus, and iron. Yes, using dried chickpeas makes a big difference.

you’re absolutely right, dried chickpeas don’t have any added salt, so that is definitely a benefit! i have not frozen hummus before but i’m pretty sure the texture will not survive the freezing process.

i don’t have any recipes specific for diabetics but i have been exploring the keto diet which i’ve heard can help with insulin control – chat with your doctor about it and see if it’s something that sparks some interest in you – there are a lot of keto recipes out there!

One benefit to using dried chickpeas your recipe did not mention, is the fact that canned chickpeas can be very high in sodium. My guess is dried chickpeas would be zero or very low sodium?? My big question about making fresh hummus is whether or not it is beneficial to make a larger batch and freeze in smaller portions. I am guessing probably not??

I am a newly diagnosed diabetic so I have to re-educate myself to maintain controllable blood sugar levels. I also have heart disease. Basically, it feels like I can’t eat much of anything I love.? I would be interested in learning if you have recipes that would be great for people with diabetes, heart disease, or other special dietary needs.
